The '73 was always great. A wine with depth and satiny richness. Marvelous length and texture—lots of life left in it!
All grapes from our own vineyards are picked by hand. This implies rigorous selection directly on the vine - only fully ripe, unscathed fruit ends up in the cellar. By the way: we have no irrigation systems in our vineyards. It is true that in extremely dry years it may happen that we forgo one or another harvest from young vineyards. On the other hand, the vines will root substantially more deeply, thus releasing extra aromas and flavors as well as power into the grapes.
By means of this process, young shoots are gathered into the wire frame in order to 0btain a desirably tall and delicate canopy of leaves.
Two adjustable pairs of wires are opened out to a wider spacing; this will make the work of training the vines less arduous in the next few weeks.
washing and maintaining the barriques; realigning, stacking and filling them—
and then we're done!
In our vaulted cellar, the freshly washed barriques are stacked once more and then filled.
Steinzeiler 2011 is blended; the Blaufränkisch is joined in barrique by small proportions of Zweigelt and Cabernet Sauvignon.
After blending, Steinzeiler will spend the next 24 months maturing in our vaulted cellar.
I've gone into the next room.
That which I've been for you,
I shall still remain.
Call me by the same name,
that you always have.
Speak with me,
like you have always done.
No new expressions, please—
neither celebration nor sorrow;
laugh again about those things,
we laughed about together.
Pray and laugh, and think of me:
out of sight must not be out of mind.
I haven't gone far;
I'm just on the other side of the path.
